Balsamic Red Beet Sauce

Like beets but don't know what to do with them? Here is a fun option for using beets other than simply putting them on top of a salad. Beets are a lot of work to roast and peel, all while avoiding permanently red-stained fingers and counters. My solution, an inexpensive one at that, are Melissa's Peeled Baby Red Beets, found at Trader Joe's for $2.50.  They are trimmed, stemmed and sealed in a vacuum tight package. I put mine in a Tupperware container and they lasted for 2 weeks. The serving size for these beets is 2.5 baby beets, and the nutrients per serving is 40 calories, 1g protein, 30mg sodium, 10g carbohydrates, and 0g fat. To make this sauce, whip out your food processor and spend 30 second pureeing the following ingredients. Heat it on the stove top for another 2-3 minutes and you are ready to go. I served this sauce on the side of the Cannellini Bean Cakes.

 


Balsamic Red Beet Sauce


  • 4 baby red beets

  • 1/2 cup water

  • 1 tbsp soy sauce

  • 2 tbsp balsamic vinegar

  • 1/2 tsp salt

 




  1. Place all ingredients in a food processor and puree.

  2. Pour sauce into pot on stove top and warm, stirring constantly, for 2-3 minutes.

  3. Serve warm.
