Frozen Greek Yogurt Bars

For better or worse, I'm a dessert person. I love a tasty treat in the evening after dinner. In an effort to get back to pre-pregnancy weight, the nightly servings of ice cream had to go, as did the cookies and brownies that made an appearance a bit too often during those 9 months. Since I can't seem to give up "dessert," I have gone on a hunt for healthier substitutes. I found this recipe from The Lean Green Bean while browsing Pinterest and made some slight modifications. The result is a tasty snack/desser/late night treat that is far better for you than that double scoop of chocolate chip cookie dough ice cream ...and almost as good.

Frozen Yogurt Bars

Servings: 12 bars

  • 3 cups 0% plain Greek yogurt
  • 2 bananas
  • 2 cups strawberries 
  • 1 cup low fat granola
  • 1/4 cup dark chocolate chips
  • 1/4 cup white chocolate chips
  • 2 Tbsp honey
  • 2 tsp vanilla extract



  1. Place bananas and strawberries in food processor and pulse until chopped into bite size pieces. 
  2. Mix all ingredients together in medium bowl.
  3. Line 9×13 pan with foil or parchment paper.
  4. Spread mix in pan and place in freezer until frozen, at least 3 hours.
  5. Flips yogurt bars onto hard surface. Cut into 12 pieces.
  6. Store in airtight container. If you need to stack the bars, separate layers with parchment paper.



February Foodie Penpal Reveal

It's that time again. That is, it's time for this month's Foodie Penpal reveal. This is my second month participating in this wonderful program. Lindsay, over at The Lean Green Bean, started this and man oh man has it taken off. How can it not? You get to "meet" awesome people from all over the internet (i.e. all over the country and Canada). You get awesome food/foodie items. And you get to give awesome food/foodie items. All while spending only $15. The giving part is wonderful. It's a fun game to play each month - to see what you can get for someone for just $15. How much can I get them, how many neat things, how many new and unique food items. This month, I gave to Brooke, of Brooke Not On a Diet. Check out her site and her incredible story, plus see all the neat (or at least I think they were) things I got her this month.

Now on to my goodies. The one's I received. Sarah writes a blog called "Walking on My Own 2 Feet." She lives in Maryland, where I just recently relocated from, and will be joining the military. She writes about fitness, health tips, and general life tips. Plus she seems to be a really awesome, sweet girl. My package from Sarah rocked. I opened it and on top were dried apple rings and dried cranberries from Trader Joe's plus a bag of pecans. She had me at Hello. I love (as in really love) dried fruit. That could have been everything in my package and I would have been a happy camper. But no, there was more.

Next I found an awesome tupperware container. It has a large bottom compartment, a divider, a small salad dressing container that fits in the middle and a knife/fork combo that also snaps into place. How cool is that? Plus it's BPA free. Ok, now I am thinking, this must be done. Nope again. There were Laughing Cow blue cheese wedges (hello, delish!) and a container of a white sauce. Stumped about the last thing, I opened it up to the sweetest handwritten note. Put it all together and what do you get? All the makings of a Fuji Apple Chicken Salad from Panera, to include the kick-butt salad dressing that comes with it! What a cute idea. I had never thought to gift a bunch of items that make up one singular meal. I LOVE that salad from Panera (ate it one too many times in college) and don't have a Panera right next to me in Stamford. Anyways, thank you, thank you Sarah. This month's penpal package rocked my world. I'm working on replicating the dressing in a healthier version than Panera's. Stay-tuned!

Okay and for those of you who are reading, here are some details if you are interested in participating next month.You don't have to be a blogger to partake in the fun, just someone willing to go out and get some goodies for your penpal and anxiously await some from someone else. If you are interested in joining for March, email Lindsay at theleangreenbean@gmail.com.

  • On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
  • You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal! 
  • The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
  • You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
  • Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month. 
  • Foodie Penplas is open to US & Canadian residents.  Please note, Canadian Residents will be paired with other Canadians only. We've determined things might get too slow and backed up if we're trying to send foods through customs across the border from US to Canada and vice versa. So, I'm going to keep two separate lists and match US w/ US and Canada w/ Canada!
